I've seen various different heights and sizes for mylar covers but what about for odd shaped books like The Stand? Will that fit in a cover made from any roll?

Odd shaped like how? The limited doesn't have a DJ so no need for mylar. The trade seems regular in size

Well I mean odd like its shorter than pretty much all the other hardcovers but its also really thick.
So not really odd, just different than regular hardcovers.

And I also don't know much about mylar covers since I've never put one on a book or seen rolls of them or anything

They come in a few different heights, if I remember 9" 10" and 12" are the typical heights. The fatness of the book doesn't matter, it's the height you want to match up as close as possible.

Can they be cut and still work just as well?

Cut from a roll? Sure, the roll is going to be a specific height then you just cut as long as you need. If the height is a little to tall (say it's a 10" high roll and your book is 9", you just fold the extra over the inner part of the DJ).
